Brittany and I are vacation in Myrtle Beach. Of course I made some guacamole the day we got here. We were eating guacamole and drinking Coronas when Brittany said she wanted some more Mexican style food to go along with our meal. We didn’t have much in the hotel room so I scrounged together a few things and came up with this.
Melted butter in a medium skillet, Split a banana, fried both sides of banana for 3-5 min per side, deglazed the pan with tequila, sprinkled sugar over meat of the banana, flambéd to caramelize the sugar & banana, removed and plated the banana, reduced the tequila butter sauce by half, garnished with cilantro.
